One dusky September lockout, Mr B.S. was persuaded by Mr P.C. to have one for the road at Mr Bumbles, in Blackwater. Where, after a post-prandial Sirencraft sess, he introduced Mr P.C. to Irish whiskey. Mr P.C. couldn’t ingest Mr B.S’s BS and Mr. B.S couldn’t digest Mr P.C.’s PC ramblings. But one needed the other, like they both needed this substantial Mexican-hash breakfast at dawn. Which, courtesy of Bojo’s early 10pm chuck-out, I was forced to notch up, as pop-up stables landlady.
It was obvious a healing breakfast was called for, and I remembered medicinal chemistry school learnings: “treat like with like”. I make no apologies for inserting a secret bottle of beer into the salty protein, rehydration equation. They recuperated to tell the tale, just by some whimsical luck of the Irish.
If you are following this recipe, the above might sound familiar. So let’s simplify:
- Raid your fridge for leftovers, you can substitute whatever with whatever. I used:
- Meat & Dairy: ham, chorizo,bacon, sausage, eggs, cheese
- Spices: ½ teaspoon of paprika, cayenne pepper, rancho chilli flakes, white pepper, 2 chopped garlic cloves, oregano, squirt of lime juice
- Veg : baby potatoes, onions, peppers, mushroom, fresh tomato (or tin of chopped tomatoes)
- Beer – I used a can of a brown ale which I stole from my husband’s stash but any will do
- Put pan on, with baby potatoes cut in half, and boil for 10-15 mins in salty water, then drain
- Fry up an egg (1 or 2 per person) in a frying pan then set aside
- Meanwhile chop all the meat and veg up into small pieces and put spices in a small dish
- Fry the onion in a little oil to the frying pan on a medium heat for 2 mins
- Add any thick meat like sausages and cook until they are fairly brown
- Add other chopped thin meats like bacon and keep stirring until starts to brown
- Add the bottle of beer and stir for 5 mins turning up the heat a little, then down
- Add the tomatoes and tomato puree & lime juice squirt, and cook until the sauce thickens
- Add cooked potatoes, the peppers, mushroom and spices keep stirring for another 5 mins
- Serve with fried egg on top and sprinkle with salt and a grating of cheese… or fresh coriander & lime wedge if you really want to impress the missus or mister
- Go back to bed. One-pan washing up can wait. Enough calories and nutrition for all day.
